  • Sweet (or American) potatoes 300 g
  • Brie 125g
  • Raspberries 150g
  • Brown sugar 1 tsp
  • 1 pinch chili powder
  • Shelled hazelnuts 20 g
  • Extra virgin olive oil to taste
  • Salt to taste
  • Rosemary to taste
  • Black pepper to taste
Sweet Potato Appetizers


  1. To make the sweet potato bruschetta, start by washing and drying the potatoes, then cut them lengthwise into 5-6 mm thick slices, without peeling them.
  2. Place them in a bowl and season with oil.
  3. Salt, pepper and chopped rosemary.
  4. Massage the potatoes to flavor them. 
  5. Then lay them on a baking sheet.
  6. Cook them in a preheated oven in a ventilated mode at 200 ° for about 20-25 minutes. While the potatoes are cooking, cut the brie into thick slices trying to obtain slices of the same size as the potatoes.
  7. Now take care of the sauce in a saucepan put the brown sugar 
  8. The chili powders. 
  9. Half the dose of raspberries.
  10. Cook over low heat for 2-3 minutes, just long enough to obtain a puree. 
  11. Pass with the sieve (11-12) and collect the sauce obtained in a bowl.
  12. Let it cool before dipping the remaining raspberries.
  13. Mix gently.
  14. Meanwhile, the potatoes will be ready, so take them out of the oven. 
  15. Place a slice of brie.
  16. On each and put in the oven in the grill mode at 240° for 4-5 minutes to melt the cheese. After this time, take out the bruschetta.
  17. Add the sauce with the whole raspberries.
  18. Coarsely chopped hazelnuts.
  19. Ground pepper.
  20. Some rosemary needles. Serve your sweet potato bruschetta, immediately.


Eat the sweet potato appetizers/bruschetta immediately. We do not recommend storing them after cooking. It is possible to make the raspberry sauce in advance and heat it up when serving the bruschetta.


As an alternative to brie, you can use slices of scamorza cheese to obtain a stringy effect. If the raspberry sauce is leftover, use it to accompany a cheese platter, its sweet and sour taste is perfect for tasting!

Sweet potatoes, better known as batata or American potatoes are suitable for many preparations. With an orange color and low water content, they are perfect for making first courses and side dishes; even if today we have chosen to accept a small challenge and turn them into a rich and tasty sweet potato appetizer.

This is how this sweet potato appetizers crouton was born … not the classic bread but a slice of this tuber cooked in the oven welcomes one of the simplest but most feared preparations in the kitchen: the poached egg, laid on a bed of vegetables and garnished with crispy bacon strips. 

When cut, the dark yolk will slip away making your sweet potato appetizers crouton unique and spectacular. The result will be a substantial appetizer, also perfect to be served for a brunch and to be personalized from time to time with the ingredients you love.


  • Sweet potatoes 180 g
  • Eggs 4
  • Bacon 4 slices
  • Salt flakes to taste
  • Extra virgin olive oil to taste
  • Salt to taste
  • Black pepper to taste
  • Sweet paprika to taste
  • 2 sprigs rosemary
  • Songino 20 g
  • White wine vinegar 1 tbsp

How to PREPARE Sweet Potato Appetizers Croutons

  1. To prepare the sweet potato appetizers crouton, start with them and peel them.
  2. Take 4 slices about 1 cm thick from the central part, cut them transversely.
  3. Place them on a baking tray. With the leftovers you can make a velvety sweet potato or simply cook them in the oven and serve them as a side dish. At this point salt the potatoes.
  4. Season with a pinch of pepper.
  5. Sweet paprika and arrange a piece of rosemary on each slice.
  6. Sprinkle them with a drizzle of oil.
  7. Cook in a preheated convection oven at 190 ° for about 25 minutes. In the meantime, put a pan full of water on the fire that will be used for cooking the eggs and prepare the bacon. Place it on a hot pan and only when it is golden brown turn it.
  8. Wait a few more minutes until it becomes crispy.
  9. It will take about 5 minutes in total. Using tweezers, transfer the bacon slices to a tray lined with paper towels.
  10. Keep them warm. At this point take care of the poached egg. When the water starts to boil (moderately, the fire should not be too strong) add 1 tablespoon of white wine vinegar.
  11. With a whisk stir always in the same direction to create a vortex.
  12. Then break the egg into a small bowl and pour it into the vortex. 
  13. 2 minutes of cooking will be enough, no more, and your poached egg will be ready, you won’t need to mix or turn the egg. Using a slotted spoon, take the egg from the water.
  14. Gently transfer it to a tray.
  15. Proceed in this way until all the eggs are cooked, one at a time. At this point, your potatoes will also be cooked, take them out of the oven.
  16. Remove the rosemary sprig.
  17. Transfer to a cutting board and enrich your sweet potato crouton by placing a pile of Longino.
  18. Transfer the poached egg over the salad, very gently, season with the coarse salt flakes.
  19. Finish with the bacon slices, dividing them in half.
  20. The sweet potato appetizers crouton is ready to serve.

If you are unable to recover sweet potatoes, you can replace them with pumpkin. Instead of bacon, for a vegetarian version, you can use parmesan wafers by dividing them and instead of songino you can use avocado slices.
